Patriotic Berry Jello!

This super simple Berry Jello recipe is really great for any time of year but with the vibrant red color of the raspberry jello and the blackberries and blueberries, it makes for a perfect 4th of July or Memorial Day festive dish. I also love the it has a very light sour cream based topping instead of a sweeter whipped cream.  The sour cream is perfectly balanced with the sweetness of the jello. The recipe comes from my cousin Leanne who has since passed this on to our whole family. It's our go-to side that adults love and kids keep coming back for more.  

Berry Jello

Ingredients:

1 6 oz box of raspberry jello

2 cups boiling hot water

1 can whole cranberry sauce

1 can crushed pineapple

1 bag of frozen berries (preferably the raspberry/strawberry/blackberry mix)

Topping

1 pint sour cream

1 tbsp sugar

fresh berries to garnish

Directions:

Dissolve jello in hot waiter.  Add fruit and stir. Chill to set. Mix sugar and sour cream together until smooth (just mix it right in the container). Spread sour cream over top in an even layer. Garnish with fresh berries or for a patriotic touch, make a flag out of fresh blueberries and cut up strawberries!
